Conegliano-Valdobbiadene is a magnificent area, but difficult to cultivate. For many years winegrowers have tilled the hills, inch by inch, to make the soil more suitable, looking after their beloved vineyards with their own hands.
It is a unique place both in Italy and globally, and has been named a World Heritage Site by UNESCO.
Superiore di CARTIZZE:
A unique spumante wine of its kind obtained by processing the Glera grapes grown in the small hilly area of Valdobbiadene (104 hectares overall) known as Cartizze.
The Cartizze Foss Marai has an intense wisteria aroma, with a hint of rose.

Sommelier notes: Surprisingly not overly sweet to the taste, will match well with aperitif or light courses throughout the meal. A fine example of what can be produced.

The rich bouquet of Strada di Guia 109 Extra-dry stands out for the intensity and elegance of its acacia and apple aromas. Its freshness and residual Sugar blend together exquisitely, resulting in a truly delicious flavour.

The rediscovery of native varieties no longer in use but of great value, has given rise to ROÖS, a warm yet lively rosé spumante wine.
The predominant aromas are given by fruits of the forest and cornel cherry.

Brightly deep yellow in appearance yet surprisingly light to taste. Intense and complex aroma with chamomile and meadow flowers leading onto ripe limes and fruity peach skin. It is dry on the palate, well balanced between freshness and softness. The taste lasts long and there is good minerality due to the volcanic soils of the vineyard.

Sommelier notes: After two years of maturity this wine is ready for drinking and buyers should look for this aging time. Great as an aperitif, but will pair very well with Vegan vegetable dishes or a great vegan pairing is a cold Italian Market Place Salad: Ditalini pasta; fresh basil, oregano, tomato, fresh sliced garlic, black olives, fresh mozzarella, sliced red peppers, topped with orange zest.

Beautifully described as straw yellow in appearance with deeper gold reflections it clings to the glass well on examination. Aromas of minerals and salts lead onto ripe green and yellow fruits especially kiwi. Elegantly balanced between freshness and warmth leaving a lingering memory of almonds.

Sommelier notes: The growing on volcanic soils gives this wine a very mineral presence. Imagine nibbling the last pieces of fruit from the stones of fully ripe peaches and nectarines.
For Vegan cuisine this would pair superbly well with chilled soups and couscous salads

Innovation and care for the land: these are the passwords that have been urging the winery to invest in the vineyards and wine cellars for years, in order to obtain wines which fully enhance their terroir.
The company has embarked on a process of conversion that, from the harvest 2015, will bring it to be certified ORGANIC, in order to clear the use of pesticides and pesticides, enhancing and increasing the self-regulating mechanisms of ecosystems.
This special attention to nature allows the winery to have a richer and richer soil and sound high quality grapes.
Casabianca produces a line of IGT products, including of this white and these two red wines.

Casabianca is a natural wine producer located in the heart of Chianti Colli senesi. Yet they are here producing a boundary pushing white wine which only permits the I.G.T. classification from within the D.O.C.G. region of production.
Also worth noting that the bottle is seen as entitled to its own piece of artwork thus doubly reflecting the artistic heritage of the region.
Cleo I.G.T. Toscana
Sommelier notes: A pale straw-yellow with pale green hues at the edges. The bouquet is intensely ripe citrus stone fruit, especially apricot with a secondary note of dry green tea leaf. The flavour is pears and ripe peach combined with mango freshness. Well balanced and very persistent. Would pair well with Vegan dishes that are being flavoured with aromatic herbs such as Thai Basil or Tarragon.

Sommelier notes: As one should expect; an intense ruby red with violet reflections in colour, with that classic bouquet, definitely fruity. With the aging that comes from time in barriques it expresses notes of jam, spices, coffee and cinnamon. Yet there is freshness and harmony. Great depth. Long and pleasant persistence. Ideal service temperature would be 18-20c. As for vegan pairings, well try grilled mushrooms, tomato sauce pasta, vegetable stew, and best of all, vegan chocolate chip cookies

Loccareto I.G.T. Toscana
Colorino, a grape perhaps new to you, perhaps not. Usually used as an agent to help the Chianti blends of the region gain their deep red colour.
A grape native to Tuscany but very few winemakers get chance to use it as a single grape variety as the need for it in Chianti blends accounts for most production.

Sommelier notes:In colour; ruby with light garnet shades to the outer edges, The bouquet is intense and frank. The vanilla of the oak is balanced well against the fruits. A rounded well-structured mouthfeel creates a harmony between the tannins and the alcohol which is noticeably there at 14%. Best served at 18-20c and a superb pairing for vegan dishes focusing on lentils especially.

Sommelier notes: Every part of this wine indicates harmony between its elements.
It can be described as an elegant wine evoking red berries and spices. Intense ruby red in colour,elegant and spicy with fresh notes of red berries. In the mouth it is soft, persistent and fresh at the finish. Recommended Vegan pairing with pasta dishes with red sauces and spicy dishes. Best served at 18c.

Vinification: the grapes from our best vineyards registered as Morellino DOCG are processed in a very traditional manner: the bunches are destemmed, pressed and fermented in steel tanks for two weeks at a controlled temperature of 26°C. Ageing for 3 months in steel tanks, after blending the wine continues its refinement for another 3 months in steel tanks and at least one month in the bottle. Certification: ICEA – Naturland Fair

This Morellino di Scansano, one of our region’s most extraordinary wines, comes from our vineyard in Uccellina Park. An elegant, compact and full-bodied wine with pleasantly fruity and spicy notes. Colli dell'Uccellina, is produced with infinite care and patience, selecting only the best grapes to guarantee the highest quality. The wine ages in French oak barriques for several months until it reaches its maximum expression.
COLLI DELL'UCCELLINA Morellino di Scansano riserva D.O.C.G. Toscana
Sommelier notes: Ruby red in colour with pale edges, Initially giving ripe red fruits and noticeable blackcurrant there develops a pleasant and complex flavour of spice. The taste leads with fresh dark fruits followed by a well structured tannins which balance the freshness very well. The flavour lingers well. This would pair well in a vegan cuisine with stews and lentils. Will best be served at 16c.

Grape variety: 85% Sangiovese, 15% Merlot Production area: Magliano in Toscana Annual production: 20,000 bottles Grape harvest: manual, in cratesVinification: the grapes are harvested when they achieve optimal ripeness and vinified separately in small stainless steel tanks at a controlled temperature. When fermentation is completed, the Sangiovese is left in contact with the skins for another 10 days, while the Merlot is placed directly into new French oak barriques. At the end of maceration, the Sangiovese is put into French oak tonneuax for 12 months. During maturation the wines are racked twice and combined only shortly before bottling.

Sommelier notes: Fruity bouquet with mineral notes, almost petrichor like. A pale powder yellow colour with straw yellow nuances. Fruity, with hints of small ripe red berries berries and a touch of spiciness. Fresh, smooth and fruity on the palate, with well-balanced acidity and excellent persistence. The taste lingers much longer than one would expect. A recommended pairing for Vegan aperitifs and grilled vegetable dishes. Best served at 10-12c
SANGIOVESE BIANCO Bianco Toscano IGT

Grape variety: Sangiovese Production area: Magliano in Toscana Annual production: 12,000 bottles Grape harvest: manual, in mid-September.
Vinification: light pressing of the whole grapes, static cold decanting, and fermentation in stainless steel at a temperature of 15°C. The wine is left to age on the lees for 6 months prior to bottling. Refinement in the bottle for at least 3 months.
